Possibility of Wine Production from Underutilized Wild Plant Carissa Spinarum and Phytochemical Analysis of Its Leaf, Fruit Extract

Carissa spinarum(garne) is wild variant of plant Carissa carandas an underutilized fruit found in various regions of north India, with plenty of therapeutic and functional properties. The present research aimed to see the possibility of wine production from the fruits of Carissa spinarum and examine various parameter such as temperature, pH, sugar addition, and aging time affecting wine production. This research was conducted from 2024-2025. Result showed that the supplementation of sugar 8%, pH 3.5, temperature 25°, aging in 22 days. Wine obtained high ethanol content (8.01±0.02 % v/v). wine from this valuable garne would be beneficial for health by moderate consumption.
